1-Octen-3-ol, commonly known as "Mushroom Alcohol", is a monoterpene alcohol compound with a special smell and a molecular formula of C₈H₁₆O. Its odor characteristics are strong earthy and mushroom aromas with grassy or metallic notes. It is widely used in food, daily chemicals, industry and other fields.

I. Food spices and seasonings

Natural mushroom flavor enhancer:

1-Octen-3-ol is the core component of mushroom aroma and is widely used in canned mushrooms, seasoning sauces, and vegetarian meat-like products (such as plant-based "beef" or "chicken") to enhance the earthiness and umami of natural mushrooms.

Dairy products and fermented foods:

Adding a trace amount to cheese, yogurt or soy sauce can simulate the complex flavor of the fermentation process and enhance the mellowness of the product.

Meat processing:

Used in meat flavors to simulate the fat oxidation aroma of roasted or stewed meat, especially in beef and pork flavor seasonings.

Alcohol and beverage flavoring:

Used in small amounts in sake and craft beer to add a layered feeling similar to truffles or forests; used to balance the sweetness in some fruity drinks (such as blueberry juice).
