It has both hydrophilic and lipophilic properties and is widely used as a functional additive (rather than a traditional catalyst) in food, cosmetics, medicine and industrial fields.
I. As emulsifier and stabilizer
1. Food industry
Bakery products
Used in bread, cakes, etc., to improve dough structure, enhance ductility, delay aging, and maintain soft taste.
Ice cream & dairy products
Prevent ice crystal formation and improve texture fineness; stabilize fat dispersion in cream and milk beverages to avoid stratification.
