Choline, also known as hydroxyethyl trimethylamine, is a quaternary ammonium base. It is a colorless crystalline substance or a colorless, bitter-tasting water-soluble white paste, with strong hygroscopicity. It can absorb water quickly when exposed to air. Choline readily reacts with acids to form more stable crystalline salts (such as chloro-choline from Chemicalbook), and is unstable under strong alkaline conditions, but is relatively stable to heat and storage. As an organic strong base, it can be completely ionized in water and has a low metal content. Its chemical properties make choline widely used in the chemical and semiconductor industries.
Choline was first isolated from pig bile by Streker in 1894 and was officially named choline in 1962. It has now become a commonly used additive in human food. The United States' "Federal Code" classifies choline as a "generally recognized as safe" (GRAS) product; the European Union's regulation of 1991 designates choline as a product that can be added to infant food.
