I. Aroma description
Fresh herbal aroma: mainly the cool grassy aroma of spearmint (green mint), with a slightly sweet fruity and woody aftertaste.
Difference from dextrorotatory carvone:
L-Carvone: Typical spearmint aroma, fresh and transparent.
D-Carvone: Spicy and slightly bitter aroma similar to caraway or dill.
II. Main application areas
1. Food industry
Chewing gum and candy:
As the core of spearmint flavor, it is used in mint chewing gum, hard candy, and chocolate (such as "Green Arrow" chewing gum). Addition amount: 0.1-0.5% (specific adjustment according to regulations).
Beverages:
Mix mint tea, soda (such as Sprite mint flavor), alcoholic beverages (such as mint liqueur) to provide a refreshing feeling.
Seasonings:
Used in salad dressings and pickled products (such as kimchi) to enhance the herbal and refreshing flavor.
Baked goods:
The high temperature resistance makes it suitable for mint biscuits and cake fillings, and the aroma is stable and non-volatile.
