Undecan-4-olide Uses
Peach aldehyde (γ-undecalactone, gamma-Undecalactone) is a synthetic flavor compound with a strong peach aroma, widely used in food, daily chemicals, tobacco and industrial fields.
I. Food industry flavoring agent
Fruit flavor products: widely used in peach-flavored candies, jellies, ice cream, yogurt and fruit juice drinks to simulate the sweet aroma of natural peaches.
Baked food: added to cakes, biscuits, bread, etc., to give a warm peach or cream aroma after baking, and enhance the taste level.
Dairy products: used in cheese, pudding, etc., to cover the fishy smell of dairy products and increase the complexity of fruity aroma.
Compound flavor blending:
Combined with other lactones (such as coconut aldehyde, γ-nonalactone) or ester flavors (such as ethyl acetate) to blend mixed fruits (such as peach-apricot, peach-mango) or tropical flavors.
Regulatory compliance:
Approved as a food additive by FEMA GRAS (FEMA 3093), EU (FL 10.038) and China (GB 2760), with a recommended dosage of 1–50 ppm.
